Dining at Careys Manor Hotel & SenSpa

At Careys Manor Hotel, we have three mouth-watering restaurants to choose from, which is why we do our best to source local, sustainable suppliers, and seasonal ingredients so that it’s always fresh and delicious. Even if the dishes our chefs are creating aren’t British, we will always try to ensure that the ingredients they use are wherever possible.


Inspired by nature, Cambium at Careys Manor Hotel is a creative and enchanting dining experience. Our name is reflective of our love affair with the New Forest and the desire to showcase the rich natural resources abundant in our local area and the changing nature of the seasons.

Head Chef Alistair Craig’s innovative menu begins with finding the best regional ingredients and fresh produce, some of which comes from our own kitchen garden. He likes to use local ingredients in a ‘wordly’ way reinterpreting classic dishes from around the globe with the flavours of the forest.

As the UK has become a premier wine producing region, Cambium also boasts one of the biggest collections of English wines in the country, featuring vineyards such as Marlings, Exton Park, Nyetimber and Goring.

Zen Garden

The imaginative menus created by our Thai Chefs at the Zen Garden restaurant offer a fresh infusion of exotic flavours that create exquisite Thai cuisine. The traditional Thai decor creates a tranquil and relaxed dining atmosphere.

Our ethical food policy means that the Zen Garden Restaurant sources only the finest ingredients and uses local and organic products where possible.

Le Blaireau

Situated on the grounds of Careys Manor Hotel and Spa, sample some of the best French cuisine in Hampshire, with a delicious menu inspired by regional French cooking, a selection of fine wines, and a vibrant informal atmosphere. Our expert staff are on hand to recommend the perfect wine to accompany your meal. Dishes change frequently to reflect the availability of local seasonal produce.
