Cambium
Inspired by nature, Cambium at Careys Manor Hotel is a creative and enchanting dining experience. Our name is reflective of our love affair with the New Forest and the desire to showcase the rich natural resources abundant in our local area and the changing nature of the seasons.
Head Chef Alistair Craig’s innovative menu begins with finding the best regional ingredients and fresh produce, some of which comes from our own kitchen garden. He likes to use local ingredients in a ‘wordly’ way reinterpreting classic dishes from around the globe with the flavours of the forest.
As the UK has become a premier wine producing region, Cambium also boasts one of the biggest collections of English wines in the country, featuring vineyards such as Marlings, Exton Park, Nyetimber and Goring.
Zen Garden
The imaginative menus created by our Thai Chefs at the Zen Garden restaurant offer a fresh infusion of exotic flavours that create exquisite Thai cuisine. From dishes inspired by street food favourites to recipes enjoyed in the royal palaces in Thailand, authenticity is firmly on the menu here. The traditional Thai decor creates a tranquil and relaxed dining atmosphere for you to unwind in after a day exploring the forest or relaxing at the spa .

Le Blaireau
Situated on the grounds of Careys Manor Hotel and Spa, sample some of the best French cuisine in Hampshire at Le Blaireau.
